"raw" almonds for my raw nut milk  

Should I still use "raw" almonds for my raw nut milk now that they are being pasteurized, or should I switch to another nut, and which nut do you think is best?

By all means try to get truly raw almonds.  You can still get them direct from small suppliers, even though large commercial distributors may have to pasturize.

http://livingtreecommunity.com/ and http://livingnutz.com/ both still can provide raw almonds.

That being said, I like to alternate with other nuts, brazil, macadamia, and hazelnuts, for example.  Note that besides flavor, each nut has a unique characteristic with regard to spoilage and separation (how long they  will keep in the fridge).  Overall, I find that almond milk is the most stable, brazil nut milk less so, and macadamia the least -- plan to drink mac nut milk within a day or so.

Long live living nuts (like those of us on this forum :~).

It's really a fiasco what they have done to our raw almonds. I think they will probably just decide to irradiate all the foods sooner or later.

 As indicated by another contributor, you can still get genuinely raw organic from some small suppliers. I have switched to organic sesame and sunflower and chia for my milks and other preparations.  I really miss the almonds, though.

 The FDA is considering changing the definition of the word "pasteurization" to mean anything that destroys the life in a food. For example, the public does not purchase much food that is labeled "irradiated", so if this rule-change goes through, irradiated food may be labeled as "pasteurized", as long as it does not change the smell, taste or texture of a food, making it more appealing to the unsuspecting consumer. The Almond Board of California has decided to "pasteurize" the almonds by either steaming them or using a chemical compound called propylene oxide. I don't know about you, but after reading that propylene oxide is a highly explosive possibly carcinogenic chemical that is now even banned in racing fuel, I am sure I don't want my almonds that I am going to eat to be doused in it!

I think today there are less choices in the organically grown nuts one can use to make an alternative milk.
