Lemon Custard
2 c. Young Coconut Meat
5 t. Fresh Lemon Juice
1 c. Young Coconut Water
8-10 Dates, Pitted & Soaked
½ Tsp. Psyllium Husks Powder
1 T. Alcohol-Free Vanilla Extract
In a strong blender combine all ingredients and blend until very smooth.
Use more/less dates to adjust sweetness and more/less lemon to adjust the lemon flavor.
Pour into serving cups and chill.
Garnish with strawberries or kiwi and serve.
