Pumpkin –n- Walnut Loaf
2 cups pumpkin – seeds, soaked 6 hours
2 cups walnuts, soaked 12 hours
1 cup carrot
1 cup red bell-peppers, chopped
1 cup onion, diced
1 cup dehydrated mushrooms
2 garlic-cloves, crushed
2 tsp. raw tahini (optional)
Process pumpkin seeds, walnuts and carrots in food processor until smooth.
“Pulse” red-peppers, onion, celery, parsley, and dehydrated mushrooms in a food – processor until “chunky” place all ingredients into a bowl, and mix well.
Place on serving dish, and mold into desired shape. Garnish as desired.
